Knothole Eggs

These are quickly becoming a staple in our house - my MIL makes a mean one! In fact when she was visiting Easter weekend she made them, and then the other night my husband made them again for dinner. Our son took to them right away - and if I can get him to eat egg that's GREAT! That's good protein!

Ingredients:
butter
1 slice of bread (I find potato bread works great!)
1 egg
garlic salt

Directions:
  • Butter both sides of the bread and then cut a circle about 1-2 inch(es) in diameter
  • Place a dollop of butter in the frying pan over a medium heat, place bread in and cook bread on both sides for a short time (starting to get it toasted, but not quite)
  • Then crack the egg into the hole. I like to stir the yolk a bit so it's more 'scrambled'
  • Cook on each side for as long as you like to get the egg consistency you want (over easy, medium, etc.)
  • Sprinkle with garlic salt and serve

They are super easy, pretty quick and not very much clean up. For my son I serve it with ketchup and let him 'dip' - which he is quite fond of. He ususally will eat one piece of bread and one whole egg this way - and that is great!

Vanilla Pancakes

I think one of my favorite things about pancakes is that they are vessels just awaiting to hold all sorts of treats - whether that be fruit, nuts, sugars, syrups, oh the possibilities are endless! Today for brunch - I wasn't being fancy I was being late on breakfast and early for lunch - we had vanilla pancakes! Not even that fancy from scratch stuff - nope broke out the Bisquick and stirred up a batch. My son and I enjoyed them with just a dip or two of corn-syrup-free syrup! Yum!

Ingredients:
2 cups of Bisquick
1.25 cups of milk
2 eggs
2 tsps of vanilla extract

Directions:
Mix all together, pour a 1/4 cup scoop over a hot griddle, wait for the top to bubble, flip and wait for other side to brown. Serve and enjoy!

Nothing much to it and we have extras to enjoy and snack on in the fridge. A little jelly and they are an excellent treat!

Banana Pancakes

Fall is here and on a chilly cold day a fun and warm lunch is in order. So why not pancakes and to make them even tastier let's throw in a ripe banana! Yum! Yes, I cheated somewhat because I did use the ever faithful Bisquick... because well, it's quick! It was quite yummy. My son enjoyed his first taste of pancakes, although his second bite was far superior and well received, most likely due to the fact that it contained syrup that time! Yum!

Banana Pancakes Recipe
makes about 15 medium sized pancakes
2 cups of Bisquick
1.5 cups of milk*
2 eggs
1 ripe banana

* add more milk to make the pancakes thinner or a half cup less to have thicker pancakes.

As usual make sure your pancake bubbles throughout before flipping it otherwise you could have a mess on your hands.
